Marvelous Marbled Eggs

I had many years of restaurant work experience by the time I go to college. As an older kid in the family, I waited on tables and served tea and coffee to customers. When I serve the food to the customers, they automatically add salt and pepper to their food. Since I drink tea without any ingredients, I thought it was unusual to see customers add salt and pepper to thier tea. Now I know there are many ways to use tea, especially in cooking.

Here is a very popular Chinese appetizer that is easy to make. It’s a good snack any time of the day. Put 6 eggs in water and bring it to boiled. After the water boiled, reduce heat and simmer eggs for 10 minutes. In another pan, use 4 servings of your favorite black tea and 3 cups of water. Brew the tea as usual and discard the tea leaves. Flavor the tea with 2 tablespoons of soy sauce. Once the eggs are cooked, roll them on the counter to crack the egg shells. Do not remove the egg shells yet. Continue to simmer the eggs in hot water for 10 minutes. Let the eggs cool off and refrigerated for 8 hours or overnight. Eggs can now be serve, hot or cold.

You can use a Deviled Egg recipe with the egg yolks or try this recipe using crab meat.  It is another variation to adding flavors to egg yolk. Cut eggs in halves and separate the egg yolks. With the egg yolks, add 6 ounces of crab meat and 6 tablespoons of mayonnaise. Add pieces of pickled ginger, half teaspoon of rice wine vinegar, salt and pepper to flavor it. Add a teaspoon of the crab meat on the egg halves. Garnish with parsley.

This gave us an idea to color Easter eggs. As a matter of fact, my daughter used this same technique to color Easter Eggs. By using food die, we made many marbleized eggs during Easter.
